🫒 Ingredients
Steak | We chose to use Top Sirloin for this recipe as we are always trying to find tasty and tender options for cuts of meat that aren’t traditionally tender. Cutting up a sirloin into cubes means that it is going to cook super fast which will limit the the chances of it drying out.
Provolini Salad | Choose either this salad or a Kalamata Olive mix to pour over the top of the steak bites. The flavors that come from the vinegar based dressing with the the Greek spices on the rub turn this into a chef-quality dish. The salad is found right by the Kalamata olives in the specialty department of the grocery store. It has olives, red peppers, cheese and mushrooms. Sometimes it will have artichokes in it as well.

Step One: Combine the olive oil and Greek Freak Seasoning into a bowl and stir. Add it to a Ziploc bag, add steak cubes and work it to fully cover with the seasoning and oil.
Step Two: Slide the cubes onto skewers, allowing air space in between each piece of meat.
Step Three: Heat grill up to 400-425 degrees to allow for a hot sear that will cook fast.
Step Four: Place the skewers on the grill over direct heat for three minutes per side.
Step Five: Remove from the grill and top with the Provolini Salad and serve.
❗ Expert Tips
Use flat skewers if you can find them or have them. It really helps the food from not twirling when you try to turn them over on the grill.
If you want a little more intensity of the flavor, marinate the steak for 30-90 minutes in the seasoning mix.
Cutting the steak into bite sized cubes allows the steak to cook fast on all sides and minimizes the risk of over-cooking and drying out the meat. Heat causes the proteins in the meat to tighten up.
If you want to improve the chances of this steak to be even more tender, tenderize it with a fork and give it a few stabs before marinating it. It will break down any muscle tissue and allow the marinade to permeate deeper into the meat.
The best option is to stop the cooking when the meat is medium or medium rare. Well done steak has a higher chance of having the moisture pulled out of it.
Always end the night with a little bit of fruit that can be grilled up quickly like the Grilled Bananas with Ice Cream or the Grilled Pineapple Slices, both of which are done in less than 10 minutes.

- 1 tbsp Greek Freak Seasoning substitute your favorite Greek Seasoning (we used Spiceology)
- 1 cup Olives Kalamata (we used Provolini Salad Mix)
- 2 Steaks cubed (we used Top Sirloin)
