Fold the bacon over the brussel sprout and onto the skewer
Add the next brussel sprout, and fold the bacon over again
Rinse and repeat until the skewer is full or the bacon is fully used
Grill the kebab
Set your grill to medium direct heat. I used the Big Green Egg set to 350 degrees
Before placing the kebab on the grill, lightly coat the brussel sprouts and bacon with olive oil
Grill for about 3-4 minutes on each side
Note:
Be careful in adding the brussel sprout the skewer. It is a relatively hard vegetable and you should take care.
Notes
Bacon Choice: Use a thinner bacon here. The thick bacon is going to take a long time to grill in between the Brussel Sprouts and it stands a chance of not getting fully cooked. Grill Temp: Don't overheat the grill where everything is burning but the Brussel sprouts are still hard and the bacon isn't completely done. This is the time to use 350 degrees and watch for flare ups as they will burn the bacon. Hot Spots on Grill: Rotate the skewers around as there are natural hot spots on the grill. You want the heat to cook these and by rotating them, you are giving all the skewers a chance as an even amount of time on hot and cold spots.
