Set up the grill for indirect heat

Add the cheese blocks to a disposable pan
STEP 2
Smoke for about 20 – 30 mins. Once I could see the cheese starting to get soft, I took it off the grill to cool!
STEP 3
When it has returned to room temperature, wrap it in butcher paper & let it rest in the refrigerator for 24 hours
