step 1

prep the bologna

Carefully cut slits along the sides of the bologna at about one inch intervals to form a diamond pattern

step 2

aDD THE sauce

Combine the BBQ sauce & mustard together & rub it liberally on the bologna. 

Make sure to cover the two ends!

aDD THE rub

Sprinkle the rub over the entire chub

step 4

smoke

Let the bologna smoke for 2-4 hrs. Look at the outside & when it is dark & almost crispy, remove it!

step 5

aDD THE sauce

With 30 mins remaining, brush on the BBQ glaze. Allow it to continue smoking for 30 more mins before removing

step 6

serve

I like to throw the slice back on the grill like shown in the photo below!
