Notes
Faster Cook Time: For an even faster cook time, pound the chicken breasts flat. Place the chicken between two layers of saran and use the flat side of a meat mallet to flatten. Alternatively, use a rolling pin to hit the breast. It won't take long to flatten (and it is a bit of fun!).Cooking Time: Cooking time is always determined by the internal temperature and use the time as a guide, not as a 100% determination if food is done. Hot Spots: Check for hot spots on your grill. You may have spots where some chicken is over cooking while others are undercooking. Move everything around when you check on the chicken. Preheat Grill: Take the time to preheat the grill. It will be 15-30+ minutes depending on the set up you have. You need to have the grill grate get smoking hot before you start grilling the chicken or it will start to slowly cook and it is much harder to get the sear marks.
