Combine all the ingredients in a blender and pulse unless smooth.
Steak Skewers
Slice steak (we used Top Round) to about ¼ inch thin and then marinade using the Cilantro Lime Marinade for 30 minutes.
Remove steak from marinade and slide on to skewers.
Heat up grill to direct heat to 400-425 degrees. You want it hot so it will grill fast and char the outside.
Grill three minutes on each side, at the most.
Notes
Use a Lean Meat: Fatty meats will be harder to slice to a uniform thickness and won't stay on the skewers as easily. Use a lean cut like a top round.Concerned About Tenderness? The thin slices help with tenderness, but you may also marinate the slices in lime juice for one to two hours. The acidity will break down the connective tissues in the steak. Fast Grilling: This is cooked over direct flames on the grill and will only take two to three minutes per side, so don't leave the grilling area or they risk burning.Soak the Skewers: Presoak the wooden skewers. They won't be on the grill very long, but mine scorched quickly, even after soaking them. It is better to be safe than sorry.
