Grilled Greek Steak Bites served with a heaping pile of olives, cheese, peppers and mushrooms creates a gorgeous and extremely tasty meal for your next cookout.
1tbsp Greek Freak Seasoning substitute your favorite Greek Seasoning (we used Spiceology)
1cup OlivesKalamata (we used Provolini Salad Mix)
2Steaks cubed (we used Top Sirloin)
Instructions
Combine the olive oil and Greek Freak Seasoning into a bowl and stir. Add to a Ziploc bag and add steak cubes and massage to fully cover.
Slide the cubes onto skewers, allowing air space in between each piece of meat.
Heat grill up to 400-425 degrees to allow for a hot sear that will cook fast.
Place the skewers on the grill over direct heat for three to four minutes per side.
Serve with Provolini Salad or Kalamata olives.
Notes
Skewers: Use flat skewers if you can find them or have them. It really helps the food from not twirling when you flip it. Marinade: If you want a little more intensity of the flavor, marinade the steak for 30-90 minutes. Cutting: Cutting the steak into bite sized cubes allows the steak to cook fast on all sides quickly to trim down the chances of over grilling and making the tougher cut of meat dry. Heat causes the proteins in the meat to tighten up. Tenderize: If you want to improve the chances of this steak to be even more moist, tenderize it with a fork and give it a few stabs before marinating it. It will break down any muscle tissue. Overcooking: Best options are not to cook these to well done. Well done steak has a higher chance of having all of the moisture pulled out of it.
