Pull pork with two forks pulling away from each other
In a cast iron skillet, sauté onion in a little bit of olive oil until they become translucent
Add pork, taco seasoning and water and heat thoroughly
Remove from heat and transfer mixture to a clean bowl. Mix in half of the shredded cheese. The heat from the pork mixture will cause the cheese to melt.
Prepare the Cast Iron Skillet
Wipe the skillet clean
Set oven to 500 degrees and place the empty skillet inside for about five minutes
Remove the skillet and reduce the temperature to 450 degrees. Be very careful, as the skillet is extremely hot.
Assemble the Nachos
In the hot skillet, create a layer of chips, pork, and cheese
You should have enough room to create a second layer of chips, the remaining pork, and rest of the cheese
Place the layered nachos in the oven at 450 degrees for 8-10 minutes
It is done when the cheese on top is melted
Remove the cast iron skillet from the oven and add olives, green onions, tomatoes and any other toppings you may desire
Use sour cream and guacamole on the side
Notes
Starting with a hot skillet is key. Since the layered nachos are only in the oven for ten minutes, you want the mixture to be heated through. We have tried this without heating the skillet and it just doesn't work as well.
