If you read many of our posts, you know that Jason has a sweet tooth! It is bad, my friends. There are times when I go up to bed early and within 10 minutes I hear the pantry door open with a sweet little “creek” sound followed up by a “crinkle, crinkle, crinkle” sound as he dives into the sweet treats. Sometimes I think “does he really have no clue I can hear him??” I am looking for healthy options to satiate his sweet tooth. Grilled Peaches with Cranberries, Goat Cheese and Roasted Pecans is a fantastic dessert that you’ll want to make over and over. I can’t wait to share this with you! Not only is it naturally sweet, but the cheese and the pecans give it a boost of protein as an added bonus!
How to Roast Pecans in a Cast Iron Skillet
You may have extra Pecans from our first post Grilled Peaches with Honey Goat Cheese and Roasted Pecans, but in case you didn’t here’s the quick and easy on this one!
Heat up the grill to 350 degrees. While waiting for the grill to heat up, mix 2 tbsp of melted butter with one cup of pecans in a bowl and mix. Put them in a small cast iron skillet.
Place the skillet on the grill and cook them for 10 minutes, stirring every 2 minutes so they do not burn. Remove the skillet from the grill and allow it to cool. At this point, you can also add some salt, if desired.
How to Grill Peaches on the Big Green Egg
Spoiler alert. This is one of the easiest, foolproof grilling recipes ever.
Heat the grill to 350 degrees. Once the grill is close to temperature, cut the peaches in half, remove the pit and brush the cut side with olive oil. This just helps reduce the chance of the peaches sticking.
Place the peaches on the grill with the cut side down first for 3-4 minutes.
Flip them over and cook for another 3-4 minutes. Remove from grill and allow to cool.
See! It can’t be any easier than this!
Grilled Peaches, Goat Cheese, Cranberries and Roasted Pecans
Place the grilled peaches on a plate and sprinkle it with the crumbled goat cheese (use feta is you like that better), dried cranberries (I used Craisins in this dish) and the Roasted Pecans that we made earlier. Drizzle a little honey over the top if you want a bit more sweetness. You only need a little bit so you are still saving a ton of calories compared to the bowl of ice cream with Magic Shell (*cough* *cough* Jason.)
Grilled Peaches with Cranberries, Goat Cheese and Roasted Pecans
- 4 peaches
- 1 tbs olive oil
- 3 tbs crumbled goat cheese feel free to use feta as a substitute
- 1/2 tsp honey
- 1/4 c cranberries or Craisins
- handful of roasted pecans
- Heat up the grill to 350 degrees.
- Once the grill is close to temperature, cut the peaches in half and remove the pit. Brush olive oil on the open sides of the peaches.
- Place sliced peaches side down on grill. Grill for 3-4 minutes and then flip. Grill additional 3-4 minutes.
- Remove from grill and add crumbled goat cheese and sprinkle with the handful of pecans and cranberries/Craisins and drizzle with a touch of honey for sweetness.
