This past weekend we posted about the Grilled Chicken Breasts that we made for meal prep. Today, we’ll be making Grilled Chicken Dorito Taco Salad with them.
Life is throwing us curve balls like it does all busy families. Meal prep is our secret weapon to stay financially on-track. Isn’t it so much cheaper just to eat at home with food made from healthy ingredients?
We have all had the famous Dorito salad growing up and it is to die for! I love that salad and used to make it primarily with ground beef and taco seasoning. But recently, we have been making it with sliced grilled chicken – and it is fabulous!
When I grew up, we made Dorito salad using French dressing. Did anyone else do that? I often wonder if that is a West Coast thing or something my aunt just decided upon and we adapted to our life. Who knows!
At some point, we shifted from French dressing to Catalina, and now we use it almost exclusively.
Dorito Salad is usually mixed in a big bowl. If you are having a few friends over, layer up the ingredients in a glass bowl! It looks awesome that way. Either way, delish!
Lettuce options are tough as right now as there is a crack down on Romaine lettuce. My meal plan was to have Grilled Chicken Dorito Taco Salad so I used an iceberg lettuce mix in the bag. I won’t lie. I missed the romaine! How sad is that? When I make it again, I’ll redo the photos as it just is stunning with the deep, dark green leaves rather than the lighter iceburg lettuce.
What to put in your Easy Grilled Chicken Taco Salad?
This is the fun part of any salad really. Put in what you like and include the healthy ingredients that your family will eat. We usually add plenty of kidney beans, cheese, olives, and sour cream.
Mix it up a bit, and try red bell peppers, red onions, and guacamole. Seriously, try it all! Mix it all together with the Catalina dressing and serve it right away. Once the dressing is added, this salad doesn’t save well in the refrigerator, so only mix in the dressing when you know you’ll eat the entire meal. Hmmmm, I learned that the hard way about 25 years ago when I wanted to cut corners!
Cut up the grilled chicken and mix it in with the salad or simply slice it up and lay it on top of a bed of the dressed salad. Both work and both are amazing! It is also easy to mix in additional beans if you want to cut back on the amount of meat you are eating.
We used the other Grilled Chicken breasts in the Grilled Chicken Stuffed Avocados and have a spinach salad up next. All of this was grilled and planned using the method mentioned in the Grilled Chicken Avocado recipe link. Plan, plan, plan!!!
Vegetarian Taco Salad
It is really easy to substitute kidney beans for the protein and eliminate the chicken altogether. That makes for a fun vegetarian taco salad, and you really won’t miss the chicken at all. We try to cook one night a week without meat and this is a really simply recipe to make.
- 2 grilled chicken breasts
- 4-6 cups of chopped romaine or lettuce mix of your choice
- 2 cups chopped Doritos Chips
- 1 c cherry tomatoes
- 3/4 cup of mexican cheese shredded
- 1/2 can of kidney or black beans
- 1 small can of sliced olives
- 1/2 c of Catalina dressing
- Optional: sour cream and guacamole
- Chop or shred grilled chicken
- Mix all ingredients and serve. Top with sour cream and guacamole.
- Eat immediately -it's too good not to!
