🍽️ Why This Works
Fast | This recipe takes just 15 minutes to whip up! Seriously fast!
Simple Marinade | This marinade helps keep the chicken breasts juicy and packed with flavor.
Sriracha Sauce – Sriracha is a sauce or paste made up of chili peppers, vinegar, sugar and salt that originated in Eastern Thailand. Traditional Thai Sriracha sauce will be hotter and tangier. Americans love to add mayonnaise to it and use it as a dipping sauce, too.
It has a little bit of a kick to it but it isn’t overpowering. It has a great flavor and a little bit of heat. Ok, we can play with this!
Honey – The sweetness of the honey really tames down the heat of the sauce. It pairs perfectly for an extremely flavorful dish.
Chicken – I used boneless, skinless chicken breasts for this recipe, but you could easily use chicken thighs or even chicken wings. I think the sauce would be amazing on wings.
Note: I received a lot of questions around how to keep your chicken breasts from drying out while grilling, so I compiled my tips and tricks into a post.
🔥 Grilling Instructions
Step One: Combine the ingredients in a Ziploc bag and add the chicken breasts. Let it marinate in the refrigerator for two to three hours.
Step Two: Prepare the grill by setting it up for direct heat at 350 degrees. I use the Big Green Egg, as I think the thick ceramic walls help to cook the chicken more evenly. It seems that our chicken breasts always come out very juicy using the BGE!
Step Three: Remove the breasts from the marinade and place them on the grill. Cook for seven minutes on each side for the internal temperature to reach 165 degrees.
Step Four: Remove the chicken from the grill and serve with fresh sriracha dipping sauce!
💡 Recipe Tips
For an even faster cook time, pound the chicken breasts flat. Place the chicken between two layers of saran and use the flat side of a meat mallet to flatten. Alternatively, use a rolling pin to flatten the breast. It won’t take long and it is a lot of fun after a stressful day!
I do recommend you do this before you put it in the marinade.
Cooking time is always determined by the internal temperature and use the time as a guide, not as a 100% determination if the food is done.
Check for hot spots on your grill. You may have spots where some chicken is over cooking while others are undercooking. Move everything around when you check on the chicken.
Take the time to preheat the grill. It will be 15-30+ minutes depending on the set up you have. You need to have the grill grate get smoking hot before you start grilling the chicken or it will start to slowly cook and it is much harder to get the sear marks.
